| Australian Casino and Food/Beverage & Hotel Operation
|
Context / Scope of project
This multi-property casino and FB&H operator was keen to improve EBIT performance through driving cost efficiencies. A particular focus was put on labour utilisation, as labour was single largest cost lever. In order to make change sustainable, a Business Improvement organisation was put in place and resourced. Extensive training and capability building was delivered in the line.
Client achieved:
- An improvement idea pipeline of $13mpa (25% more valuable than original target)
- Improved labour utilisation, especially in table gaming operations
- A sustainable BI culture, with existing and new initiatives continuing to deliver post PIP’s departure

What we did:
- Performed an up-front Diagnostic (8 days) to determine scale of opportunity and highest priority areas for focus. Diagnostic confirmed labour utilisation (particularly in table gaming) as highest priority area for ongoing work
- Put in place business improvement organisation structure to work in-the-line with area Managers
- Established Results Action Review (RAR) meetings from GM down to front line (Dealers, Waiters, Housekeeping, etc) to:
- Establish visibility and accountability
- Build consensus around priority issues
- Address a pervasive “culture of waste”
- Improved labour utilisation and decreased costs:
- Identified, captured and eliminated unutilised dealer time
- Improved shift start/end processes to decrease “dead table time”
- Enhanced workforce flexibility (permanent vs. casual, etc)
- Matching labour supply to demand patterns (security, cage operations)
- Implemented efficiencies in Hotel operations:
- Mini-bar automation
- Mini-bar restock process improvements
- Laundry usage reductions
- Implemented efficiencies in Food and Beverage operations:
- Wine inventory controls
- Improved restaurant booking processes
- Increased web-based bookings
- Implemented efficiencies in Support Services:
- Improved cashier/cage processes
- Power consumption improvements
- Increased use of automated “cash out”
